Zinderende zoete finale met de Zibibbo dessertwijn<\/h2>\n

Leuke naam voor een druif de\u00a0 “Zibibbo”! “Zibibbo” komt van het Arabische woord zab\u012bb wat betekent “rozijnen”. Dat klinkt al gelijk goed. Hier op Sicili\u00eb bij Cantina Ermes laten ze hem extra lang hangen en wordt die ook extra laat geoogst. Dat gebeurt pas in oktober. Eigenlijk is het soort van Passito<\/a>. Hierdoor heeft de Cantina Ermes Quattro Quarti Zibibbo heerlijk wat restsuiker en een breed geurenspectrum.<\/p>\n

De Quattro Quarti Zibibbo heeft een zoete aanzet maar blijft altijd nog fris en evenwichtig in de afdronk. Heerlijk geurig met hints van verse abrikoos, gekonfijte sinaasappelschil en op de achtergrond wat honing en kruiden. De afdronk is warm en lang aanhoudend. Een mix van elegantie, uniciteit, diversiteit. De druif wordt ook gebruikt voor de passito di Pantelleria. Daar kent u hem misschien dan ook van! De wijn is heerlijk bij Pompoentaart met geconfijte sinaasappelschil en amandel<\/a> bijvoorbeeld. Maar de Quattro Quarti Zibibbo gaat ook erg lekker met een traditionele Tiramisu. Echt een klassieke dessertwijn uit Italie die niet gaat vervelen, Verrassend.<\/p>\n

Cantine Ermes<\/h3>\n

Cantine Ermes is een wijnbouwgemeenschap op Sicili\u00eb. De oorsprong van de gemeenschap is een verhaal van vernietiging en wederopbouw. In 1968 schudde een grote aardbeving de Belice-vallei op Sicili\u00eb, waarbij hele dorpen werden verwoest. De Sicilianen herbouwden hun huizen niet, maar bouwden een paar kilometer verderop compleet nieuwe plekken. Zo is het oude Gibellina nu een moderne kunst-installatie van betonblokken in de contouren van de oude huizen; verspreid over de vallei kan men nog steeds de ru\u00efnes van individuele dorpen vinden. Temidden van deze verwoesting besloten enkele jonge wijnmakers hier een nieuwe start te maken. in 1998 richtten ze Cantine Ermes op en begonnen ze hier druiven te verbouwen. Tegenwoordig is Cantine Ermes een co\u00f6peratie\u00a0 met meer dan 2700 leden, meer dan 12500 hectare wijnstokken en 11 wijnmakerijen. in 2018 bouwden ze ook een wijnmakerij in Puglia, de hak van de “Italiaanse laars”. In het hart van Sicili\u00eb, met een uniek territorium, gekenmerkt door een ander microklimaat en bodems van verschillende geologische oorsprong.<\/p>\n

Diverse Terroirs<\/h3>\n

In het productiegebied van Cantine Ermes komen drie typische grondsoorten voor: rode aarde, zwarte aarde en witte aarde. De rode grond komt vooral voor aan de westkust van Sicili\u00eb en bestaat uit zand en stenen met sporen van ijzer. In combinatie met het droge klimaat is hij uitstekend geschikt voor rassen als Syrah en Cabernet Sauvignon, maar ook Grillo en Zibibbo. De zwarte grond bevindt dan weer zich in het achterland bij Trapani op een hoogte van 200-300 meter en bestaat uit schalie en klei. Het is zeer windbestendig tegen droogte, waardoor de wijnstokken lange tijd zonder regen kunnen. En last but not least: De witte grond komt voor in de heuvels van Belice en bestaat voornamelijk uit kalk, wat de grond zijn karakteristieke kleur geeft. De hoogte varieert van ongeveer 400 tot 700 meter boven zeeniveau. Druivensoorten die goed harmoni\u00ebren met mineraliteit vinden hier de ideale omstandigheden.<\/p>\n

Cantine Ermes zet zich sterk in voor de bescherming van het milieu en herziet regelmatig haar teeltpraktijken. Zo hecht er veel waarde aan zuinigheid met water,\u00a0 elektriciteit zelf opgewekt en het verbruik van kunstmest vermijdt men zoveel mogelijk.<\/p>","protected":false},"excerpt":{"rendered":"
