These differences in altitude ensure sufficient coolness, which is beneficial for the acidity of the grapes.<\/p>\n The harvest is carried out entirely by hand. After the harvest, the grapes undergo a skin maceration of 15\u201320 days to extract color, flavor, and tannins. Following this, the grapes ferment at a controlled temperature in stainless steel tanks. Subsequently, the wine ages for 30\u201326 months in large French oak vats.
