Indeed, Gavi di Gavi, because the wine is called Gavi from the village of Gavi. A bit convoluted, but that is how the Italians do it. At the same time, Gavi is also known as the <a href=\"https:\/\/wijnclubamsterdam.nl\/en\/kenmerk\/regio\/frankrijk\/bourgogne\/\">Chablis<\/a> named from Italy due to its very distinct freshness and minerality. Not surprising, as this Gavi del Comune di Gavi is also deliciously crisp and fresh, pairing perfectly at the table. Pear, passion fruit, acacia, and pineapple on the nose. A tight, refreshing, and truly juicy wine. Fruity on the palate as well, with a hint of almond bitterness in the finish. Delicious with swordfish carpaccio, a seafood platter, or a classic vitello tonnato!<\/p>\n<p>What makes this wine special is the microclimate of the area. The sea breeze blowing from the Ligurian Sea offers refreshment. The sea provides good ventilation, and the remarkable south-facing exposure is excellent for the quality of the wine. The grapes gain color and aromas, and the sugar level rises. The grapes can ripen perfectly. The soil is heterogeneous and varied, allowing the Cortese grape to express different aspects of its character. Land of white tufa and limestone points to the marine geological past of this area. These alternating and sometimes overlapping red clayey and mineral-rich soils, predominant in San Cristoforo and of alluvial origin, are interspersed with these.<\/p>\n<h3>Vinification<\/h3>\n<p>The grapes for this Gavi del Comune di Gavi are grown entirely organically! After the harvest, the grapes ferment at a controlled temperature in stainless steel tanks to preserve optimal freshness. After fermentation, the wine ages for another 3 months on the lees (Sur Lie), which gives the wine its delicious soft, round structure.<\/p>\n<h3>Produttori dei Gavi<\/h3>\n<p>Produttori del Gavi is a leading Gavi producer. It is the official cooperative of the appellation. We are talking about a cooperative in the best sense of the word: driven, collaborative, focused on quality and upholding the Gavi name. The Gavi Il Forte vineyards are located in 11 municipalities, covering a total of 200 hectares stretching from Tassarolo to Bosio, along gentle hills overlooking the fortress of Gavi. Despite the varied nature of the land and the vineyards' exposure to the sun and wind.<\/p>\n<p>The regulations for DOCG wines are precise and the technology in place allows them to fully respect these regulations.The winery produces approximately 350 thousand bottles per year, a figure that is constantly growing.
