\nPaul Mas L\u2019Artisan Le Chardonnay is an elegant wine from Paul Mas\u2019s finest vineyards. This 100% Chardonnay is part of the \u201cCraftmanship wines\u201d; a collection of wines showcasing the best of the French Languedoc. An elegant wine with aromas of tropical fruit, roasted hazelnut, and delicious vanilla. Soft, ripe, and round, as you would expect from a Chardonnay. Fantastic with anything from the sea, or simply as an aperitif.<\/p>\n

The vineyards<\/h3>\n

The vineyards are situated at an altitude of about 200 to 250 meters in the Pays d\u2019Oc. The Chardonnay<\/a>-grapes come from 15 to 20-year-old vines. The soil consists of calcareous clay and pebbles. The pebbles ensure that water drains well from the vines, and the clay retains sufficient moisture to provide the grapes with enough water during dry periods. The climate in the vineyards is Mediterranean with oceanic influences. The warm, sun-drenched days receive sufficient cooling from the ocean so that the grapes can ripen optimally.<\/p>\n

Harvest and vinification<\/h3>\n

At night, when the temperature is still low, the harvesting machines move through the vineyards. The freshly harvested grapes end up in the refrigerated machine and are transported to the winery as quickly as possible. First, destemming takes place, after which pneumatic pressing begins. Settling occurs at a cold temperature of 6\u00baC. The majority of the wine, 80%, ferments for 2 weeks in stainless steel tanks. The remaining 20% \u200b\u200bferments in American oak barrels. The oak imparts aromas of roasted hazelnuts. One-third of the wine undergoes malolactic fermentation, during which sharp malic acids are converted into rounded lactic acids. This gives the wine a full, round flavor and aromas of vanilla, among others. After fermentation, it is time for aging. The entire wine ages for 4 months in oak barrels.<\/p>\n
