The sparkling golden-yellow wine has pure, vibrant aromas of tropical fruit, citrus, and green apple. Its juicy liveliness and freshness also enrich the finish, making the white Tour de Mirambeau entirely versatile as an aperitif or as an accompaniment to salads, (smoked) fish, and shellfish. It is renowned for its pairing with herring.<\/p>\n<div class=\"col-md-5\">\n<h2>Tour de Mirambeau<\/h2>\n<p>Jean-Louis Despagne is a phenomenon. Over the past decades, he has astounded the world with his sublime Bordeaux wines from Entre-deux-Mers. Despagne worked as an oenologist for several years in North Africa and in North and South America before taking over his father's estate. That estate is <a href=\"http:\/\/www.despagne.fr\/\">Tour de Mirambeau<\/a> in Naujan et Postiac. Despagne had big plans for it.<\/p>\n<p>Over the years, he expanded the vineyard from 20 to 88 hectares, increased the planting density to 5,000 vines per hectare, and reduced the yield to 1.5 kilos of grapes per vine. The objective: better ripeness and greater concentration in the wine. In the cellar, too, Despagne strives for perfection. Fermentation takes place under complete temperature control, all vinification and storage areas are climate-controlled, and the level of hygiene led to the awarding of an ISO 9002 certificate in 1997. It was the first ISO certificate to be awarded to a French wine company.<\/p>\n<\/div>\n<div class=\"page\" title=\"Page 1\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<h2>Terroir and vinification<\/h2>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"page\" title=\"Page 1\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>A climate with warm summers and fairly mild winters. The soil consists of calcareous sandy soil with an underlying layer of clay. The grapes come from vines aged 6 to 60 years. During skin maceration, part of the malic acid is broken down and the fruity aromas emerge. The final blend is assembled after fermentation, and the wine rests for some time in stainless steel tanks.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"page\" title=\"Page 1\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<h2>Taste and food pairing<\/h2>\n<p>This sparkling golden-yellow wine has pure, vibrant aromas of tropical fruits, citrus, and green apple, as well as those of fresh flowers, herbs like mint, and a silky-smooth, almost creamy texture.
