The vines are spaced 2.20 by 0.80 meters apart and yield an average of 70 quintals per hectare. They are pruned with spurs to enhance quality. The harvest is done manually in early September during the coolest morning hours.<\/p>\n<p data-start=\"2131\" data-end=\"2428\">After harvesting, the grapes are gently crushed under CO\u2082 to prevent oxidation.
