En dat is het ook wel een beetje&#8230; Hier wordt gebruik gemaakt van <a href=\"https:\/\/www.nrc.nl\/nieuws\/2012\/03\/10\/wilde-gist-geeft-lekkerder-wijn-dan-de-industriele-1078937-a787491\">lokale inheemse gistsoorten.<\/a> Hier geen geselecteerde gisten uit een laboratorium, wat al zoveel en zo vaak gebeurt. Geselecteerde gistsoorten zorgen vaak voor wat algemene aroma&#8217;s.\u00a0 Het resultaat juist hier is dat de wijn een extra &#8220;twist&#8221; krijgt en aan complexiteit toeneemt. De chenin Blanc krijgt hierdoor een extra dimensie! Het resultaat is een mooi volle gelaagde wijn met tonen van abrikoos, gele appel, honing, venkel, geroosterde havermout en subtiele invloeden van hout. Deze <a href=\"https:\/\/wijnclubamsterdam.nl\/en\/kenmerk\/druif\/chenin-blanc\/\">Chenin Blanc <\/a>is strak, zuiver, goede balans. Heerlijk om zo van te genieten maar ook\u00a0 bij een gebakken slibtongetje of de mosselpan met wat extra zure room toegevoegd.<\/p>\n<h3>Vinification<\/h3>\n<p>Het fruit uit de twee wijngaarden werd in de kelder anders behandeld waarbij de Bobbejaan wijngaard druiven hele tros wordt geperst terwijl de druiven van Ou Jong wijngaard werden ontdaan van de steel en geplet.\u00a0 De gisting met de inheemse gistsoorten vindt gedeeltelijk (34%) in RVS plaats, de rest in eikenhouten vaten van 225 en 500 liter. De gisting ontstaat spontaan en wordt op lage temperatuur gehouden. Vervolgens rijpt de Delheim Chenin Blanc Wild Ferment nog 7 maanden op de gistcellen (&#8216;sur lie&#8217;). Hierdoor wint de wijn aan complexiteit en wordt romiger en dikker van textuur.<\/p>\n<h3>Delheim Winery<\/h3>\n<p>In het hart van het gebied van Stellenbosch, aan de voet van de bekende Simonsberg, liggen de schitterend verzorgde wijngaarden van de Duitse wijnfamilie Sperling. Het landhuis wordt in 1938 gekocht door Hans Otto Hoheisen en zijn vrouw Deli, vandaar de domein naam Delheim.\u00a0 In de jaren \u201950 wordt het overgenomen door Michael Sperling en zijn vrouw Vera. Zij legden de basis\u00a0 voor het wijnbedrijf zoals we dat nu kennen. Delheim is vooral bekend om zijn Chenin Blancs zoals onze Delheim Chenin Blanc Wild Ferment en prachtige Pinotages.<\/p>\n<p>&nbsp;<\/p>","protected":false},"excerpt":{"rendered":"<p>Vanuit het wild , zo in uw boodschappenmandje!
