This Chardonnay is making us quite restless!<\/h3>\n

Because the Stellenrust Barrelfermented Chardonnay is so delicious! The nose shows ripe citrus fruit with some roasted almonds. The taste is more concentrated with stronger nut aromas, some peach notes, but also a lingering mineral aftertaste. Well-rated oak use gives some butterscotch. Nice spicy acidity. The grapes of the Stellenrust Barrel Fermented Chardonnay<\/a> be crushed and the juice allowed to come into contact with the skin for up to 8 hours without the addition of sulphur. The hyperoxygenated juice is then taken to barrels without proper settling and left to ferment with wild yeasts. Fermentation can take up to 3 months and the wine is stirred often to lift the lees after fermentation is complete. The Chardonnay spends a total of 12 months in French barrels (30% new). Also on its coarse lees, which gives the yeast cells the opportunity to undergo autolysis. This is to release more flavor and richness to the wine. Delicious with fish dishes. Great with lobster with vanilla sauce!\u00a0<\/p>\n

Stellenrust<\/h3>\n

Stellenrust Wine Estate is located just ten kilometers south of Stellenbosch, in the heart of the South African wine industry. Since its inception in 1928, it has developed into one of the largest family vineyards in South Africa. It boasts an estate of 200 hectares of vines. In 2005, brothers Dr. Tertius Boshoff and Kobie van der Westhuizen not only launched a quality offensive, but also appointed the 70 working families as shareholders with a majority stake in 100 hectares of agricultural land, which they cultivate, harvest, and expand as their own plot. This makes it one of the most successful \u2018black empowerment projects\u2019 on the continent. Furthermore, the viticulture is sustainable, and they have managed to obtain the Fair Trade label.<\/p>\n

The portfolio is already structured like a pyramid, something typical of New World viticulture. The pyramid begins with the Stellenrust Small Rust Cellar Selection, continues with the Premium Range, the Super Premium Range, and finally the Ultra Premium Range. The winery works primarily with French grape varieties such as Cabernet Franc, Cabernet Sauvignon, Chardonnay, Chenin Blanc, Cinsault, Merlot, Sauvignon Blanc, and Shiraz. However, South Africa\u2019s most characteristic grape, Pinotage, must also be mentioned here. The winery is considered one of the most reliable in the Cape and has built a good reputation for its partly original wines.
