Een deel van de druiven worden volgens de appassimento methode gedroogd waardoor een deel van het vocht uit de druiven verdampt en in de druif een hoger concentraat aan suikers en smaakstoffen ontstaat. Vervolgens worden de druiven verder verwerkt tot wijn. Het gistingsproces verloopt spontaan, dat wil zeggen dat er wordt gewerkt met de in de lucht aanwezige gisten en z\u00f3nder de handmatige toevoeging van gisten.<\/p>\n<h2>Biologisch Lunaria door Demeter gecertificeerd<\/h2>\n<p>Niet alleen organisch, maar biologisch dynamisch. Dat is wat Lunaria voor heeft gekozen. Het bedrijf Lunaria kiest ervoor om biodynamische landbouw toe te passen. Een methode om voortdurend op zoek te gaan naar innovatieve processen en technieken. Biodynamica wordt gereguleerd door strikte regelgeving met hoge kwaliteitsnormen om een goed product voor de consument te garanderen. Al deze inspanningen van Lunaria zijn ook door het strenge keuringsinstituut Demeter positief beoordeeld. Lunaria is hiervoor door\u00a0<a href=\"https:\/\/stichtingdemeter.nl\/over-ons\/demeter-keurmerk\/\">Demeter<\/a> gecertificeerd!<\/p>\n<h2>Proefnotitie Lunaria Bucefalo<\/h2>\n<p>Rijpe licht zoete (appassimento) wijn gemaakt van de <a href=\"https:\/\/wijnclubamsterdam.nl\/en\/kenmerk\/druif\/montepulciano\/\">Montepulciano<\/a> druiven. In de geur maar ook in de smaak zwarte bessen en amandelen, mooie zachte licht zoetige smaak met een lichte kruidigheid. Zachte lange afdronk waarbij de smaak van bessen lekker lang aanhoudt.<\/p>\n<h2>Cantina Orsogna<\/h2>\n<p>Cantina Orsogna is een co\u00f6peratie met ruim 600 partners in de <a href=\"https:\/\/wijnclubamsterdam.nl\/en\/kenmerk\/regio\/italie\/abruzzen\/\">Abruzzen<\/a>. Getalenteerd wijnmaker is Camillo Zulli. De wijn is afkomstig van wijnhuis <a href=\"https:\/\/wijnclubamsterdam.nl\/en\/kenmerk\/domein\/lunaria\/\">Lunaria<\/a>. Alle geproduceerde wijnen komen uit het gebied dat 15 km van de Adriatische kust ligt vlak bij de 2e hoogste berg in de Apenijnen de Majella.
