De druif Pecorino is daar inmiddels helemaal herontdekt. De Grote Hamersma over deze wijn: &#8220;Een van de betere die ik \u00fcberhaupt proefde. Zodoende zelfs met een dergelijk prijskaartje tot Sterwijn gebombardeerd. Want? Gerookte amandelen. Rijpe appels, mandarijn, sinaasappelschilletjes, tropisch fruit, citrus en een aantrekkelijke nootachtige afdronk.&#8221;<\/p>\n<p>In het glas heeft de wijn een lichtgele kleur. De wijn is fascinerend\u00a0door zijn bloemige aroma&#8217;s. Aangenaam in de mond, met heldere, schone tonen. Deze fantastische witte wijn past perfect bij gekruide gerechten als gegrilde gamba&#8217;s met knoflook, geroosterde kippenpootjes, pasta vongole en uiteraard bij Pecorino kaas. Maar ook als aperitief is deze wijn een genot!\u00a0Serveer bij een temperatuur van 12 -15 \u00b0 C.<\/p>\n<h2>Pecorino DOCG<\/h2>\n<p>De druif Pecorino was een vergeten druif die nog maar weinig werd verbouwd. Tegenwoordig is de <a href=\"https:\/\/wijnclubamsterdam.nl\/en\/kenmerk\/druif\/pecorino\/\">Pecorino<\/a> druif \u00e9\u00e9n van de meest gewaardeerde witte druivensoorten uit de Marche. In 2011 is er zelfs een eigen kwaliteitslabel DOCG voor gemaakt: Offida Pecorino DOCG. Offida is een rotsachtig gebied op zo&#8217;n 80 kilometer ten zuiden van Ascona in de regio Marche in het midden van Italie. Pecorino levert karaktervolle witte wijnen met veel smaak, sappigheid en een verrassend lang aanhoudende afdronk. Wijnen met een volle body en een aangename zuurgraad.<\/p>\n<h2>Wijnbereiding<\/h2>\n<p>De handmatige druivenpluk is begin september en de selectie is ook handmatig. In de kelder van <a href=\"https:\/\/www.terrafageto.it\/index.php\/en\/\">Terra Fageto<\/a> worden de druiven ontsteeld en voorzichtig geperst. De most blijft 16 uur op 10\u00b0 C voor een natuurlijke klaring (helder maken). Het wordt vervolgens overgebracht in roestvrijstalen tanks met een gecontroleerde temperatuur, waar het vergist bij een maximale temperatuur van 18 \u00b0 C. De wijn wordt overgebracht in roestvrijstalen tanks voor een spontane klaring tot het bottelen.<\/p>\n<h2>Did you know?<\/h2>\n<p>Pecorino is een bekende schapenkaas uit Itali\u00eb maar dus ook een druif waar deze wijn uit de Marche van is gemaakt.
