Bader-Mimeur Dessous les Mues is produced according to the highest standards of environmentally friendly viticulture. They do not use herbicides in the vineyard and hold high environmental certifications. Manual harvesting in small crates of a maximum of 30 kg guarantees the best grape selection. The ‘Dessous les Mues’ location is a special plot that perfectly reflects the essence of the Burgundian terroir. The careful selection of grapes and the deep respect for the landscape are visible in every phase of production.

    Taste profile and food pairing

    The wine has a complex flavor profile with elegant nuances. It matured for ten months in French oak barrels without using new barrels. Regular bâtonnage adds extra depth and complexity to the wine. It offers numerous culinary possibilities that highlight its versatility. Perfect with various dishes such as grey shrimp, oysters, salmon, and scallops. Also excellent with asparagus, morels, and fresh goat cheese.     Craftsmanship and Production Philosophy

Whole grape clusters are pneumatically pressed, after which the must is cold-settled. Within 24 hours, the must is transferred by gravity into vats. With only 3,500 bottles per year, this is a very exclusive wine. The aging potential is approximately 6 to 7 years, promising further flavor development. The philosophy behind Bader-Mimeur Dessous les Mues is based on a deep respect for nature and traditional viticultural methods. Every step in the process is aimed at capturing the purest expression of the Chardonnay grape and the unique Burgundian terroir.
