Corvina is the key grape in the Valpolicella region of Veneto, Italy, and forms the basis for iconic wines such as Valpolicella, Ripasso, Amarone and Bardolino. This grape is known for its lively acidity, light to medium body and refined tannins. Corvina thrives in the temperate climate of Veneto and has a thick skin, which contributes to the structure and long ageing potential of the wine.
Corvina wines are characterised by fresh aromas of cherries, red berries and pomegranate, often accompanied by subtle notes of almond, herbs and violets. The grape is rarely bottled as a single-varietal wine, but is usually blended with Rondinella, Molinara and Corvinone. Especially in Amarone and Ripasso wines, Corvina develops deep, complex flavours through the appassimento process, in which the grapes are partially dried.
Thanks to its versatility, Corvina is suitable for both light, fruity wines and powerful, full-bodied red wines. Valpolicella wines based on Corvina pair perfectly with light pasta dishes and white meat, while Amarone and Ripasso are ideal with game, stews, and mature cheeses. Corvina remains one of the most respected and beloved grapes of Northern Italy.
This grape is rarely made as a single-varietal wine (although we do have a few), but is often combined with other local grape varieties such as Rondinella and Molinara. This is especially the case in wines such as Valpolicella and Amarone. Amarone della Valpolicella, one of the best-known wines made from Corvina, is known for its rich, concentrated flavour, obtained by drying the grapes before fermentation. This creates intense flavours of dried fruit, such as figs and raisins, with a soft, almost velvety texture. The grape is often praised for its ability to produce both light, fresh wines and powerful, complex wines, depending on the production method and ageing.
Corvina wines pair well with a wide range of dishes. Lighter Valpolicella wines go well with antipasti, pasta dishes and grilled vegetables. The richer Amarone wines are perfect with heartier dishes such as game, stews or aged cheeses.
