    Louis Jadot Couvent des Jacobins Pinot Noir is a wine with all Pinot Noir aromas of cherries, blackcurrants, and those typical earthy notes in scent and taste. After a few years, the Couvent des Jacobins becomes more complex and the characteristic Pinot Noir character increasingly clear. The earthiness then takes the lead. The structure of the wine is silky, with invigorating acidity and very soft tannins. The red Burgundy Couvent des Jacobins is a cuvée of various vineyards from the Côte d’Or and the Chalonnais. The wine has undergone 9-16 months of aging in oak and steel. Served slightly chilled, it is also superb with charcuterie. Also a classic pairing with a beautiful roasted guinea fowl and with the  Coq au vin Delicious in winter from the regional cuisine.

    The grapes for the wines of Louis Jadot are always harvested manually. This prevents overripe as well as unripe fruit from entering the vinification process. Furthermore, the grape pickers use small crates during harvesting so that the bunches do not bruise or get damaged prematurely. Grapes that nevertheless escape this attention are still processed at the sorting table.

    During the vinification of the wines, the goal is for each appellation to have its unique aroma and taste. The terroir so highly acclaimed in BurgundyLet's say, the sum of all environmental conditions that determine the taste of the grape must always be recognizable in the wine. Each type of wine from Louis Jadot has its own individual character. And that, in turn, means that there is a wine in the Jadot range for every wine lover that will appeal to them greatly. Burgundy has a continental climate with warm summers and cold winters. The soil of this Couvent des Jacobins consists of limestone and loam.
