The Castelgreve Vin Santo is a full-bodied, fragrant dessert wine from Tuscany. The grapes used in Vin Santo are always of the highest quality. This is also the reason why Vin Santo is not produced every year. After harvesting, the vines are hung in a barn for 3 to 4 months to allow the grapes to dry out. Due to this drying process, the sugar content of the grapes subsequently increases.
After this drying process and pressing, the wine spends a number of years in small barrels made of various types of wood (oak, cherry, and chestnut). This gives it its specific oxidative taste, aroma, and amber color.
The color is warm amber yellow. The bouquet is full and complex. The scent is of raisins combined with aromas of apricots, figs, dried fruit, and a distinct nutty/almond note. The taste is full and warm, slightly sweet, silky, and provides a wonderfully delicious warm finish. It is precisely this nuttiness that makes the wine so suitable to drink with the famous Cantuccini Biscotti.
In addition to being delicious with Cantuccini Biscotti, this wine also pairs very well with desserts containing chocolate, Pecorino, or other sharp cheeses.
