The white wine Terra Fageto Fenèsia Pecorino comes from central Italy. The Pecorino grape has since been completely rediscovered there. De Grote Hamersma on this wine: “One of the better ones I have ever tasted. Consequently, even with such a price tag, it has been designated a Star Wine. Why? Smoked almonds. Ripe apples, mandarin, orange peel, tropical fruit, citrus, and an attractive nutty finish.”
In the glass, the wine has a light yellow color. The wine is fascinating due to its floral aromas. Pleasant on the palate, with bright, clean notes. This fantastic white wine pairs perfectly with spiced dishes such as grilled prawns with garlic, roasted chicken legs, pasta vongole, and, of course, Pecorino cheese. But this wine is also a delight as an aperitif! Serve at a temperature of 12–15°C.
The Pecorino grape was a forgotten grape that was only cultivated to a limited extent. Nowadays, the Pecorino grape is one of the most prized white grape varieties from the Marche. In 2011, a dedicated quality label, DOCG, was even created for it: Offida Pecorino DOCG. Offida is a rocky area about 80 kilometers south of Ascona in the Marche region in central Italy. Pecorino produces characterful white wines with plenty of flavor, juiciness, and a surprisingly long finish. Wines with a full body and pleasant acidity.
The manual grape harvest takes place in early September, and the selection is also manual. In the cellar of Terra Fageto the grapes are destemmed and gently pressed. The must remains at 10°C for 16 hours for natural clarification. It is then transferred to temperature-controlled stainless steel tanks, where it ferments at a maximum temperature of 18°C. The wine is transferred to stainless steel tanks for spontaneous clarification until bottling.
Pecorino is a well-known sheep's cheese from Italy, but it is also a grape from which this wine from the Marche is made. And to make things even more complicated, the Pecorino grape from Calabria is identical to the Greco Bianco!
