    Green-yellow in color and with a beautiful fine mousse that explodes in your mouth after the first sip. The bouquet has some citrus, brioche and candied yellow stone fruit, with a hint of honey. The palate is soft and smooth with a remarkable balance that translates the purity and elegance of this cuvéé.

    This champagne can be enjoyed at any time of day. Especially as an aperitif with sweet and savory snacks, for example. We at wijnen.nl particularly like to pair it with fresh goat cheese, oysters, and a piece of Turbot with a beurre blanc sauce based on this champagne.  It can also be served on its own to enjoy all its freshness.

    Baron-Fuenté and his winemakers continue to develop together with the second generation of the family. This led to the expansion of the cellar in 2000 to improve the storage conditions of the wines. In particular, this evolution allows the aging of the bottles to be extended beyond the average duration. In 2007, thanks to a second cellar expansion, the labeling and sealing process was modernized using new, more modern equipment that combines technology, quality, and better working conditions.

    Cooperation

    In 2011, it was the same ambition in viticulture and the same passion for their terroir that the families Baron-Fuenté and brought Lété-Vautrain together. It is only a few kilometers from Charly-sur-Marne, on the vineyard of Château-Thierry, that Champagne Lété-Vautrain established the property in 1968.

    To meet the family's quality standards and the needs arising from the expansion of the vineyard, a new cellar was designed in 2013. The new center perfects the pressing and winemaking processes during the grape harvest, aiming for the grapes and their purest juice, an important prerequisite for the best champagne. In the same year, Ignace, with a pronounced taste for novelty and innovation, began the vinification process in oak barrels for some of the cuvées, such as the Esprit Blanc de Blancs, Esprit Grand Cru, and Grands Cépages Chardonnay.
