The Pasqua Romeo & Juliet Passimento Bianco is a special white wine from the Valpolicella region in Northern Italy. The wine is an ode to the romantic love story of Romeo and Juliet. Anyone who has ever been to the nearby city of Verona undoubtedly knows the balcony of the opera Romeo and Juliet. The walls are covered with love messages. The label shows a small excerpt of these love messages. The white wine Pasqua Romeo & Juliet Passimento Bianco evokes the passionate and romantic love of Romeo and Juliet, but one that fortunately does have a happy ending!
This white wine is made using the passito method, a method usually applied to red grapes. The Garganega grapes are dried in crates immediately after harvesting. During this process, the grapes lose approximately 25% of their moisture. At the same time, the sugar content and aromas in the grapes increase. This is followed by a 12-hour maceration that enhances the complexity and structure. Vinification takes place largely in stainless steel tanks. A portion of the wine ages in wooden barrels for 3 months.
The Pasqua Romeo & Juliet has a full, rich flavor and good structure. The taste is refreshing, rich, and powerful. There is also a hint of butter in this pleasantly complex wine. The color of the wine is deep yellow. On the nose, you find aromas of peach and tropical fruit, such as lychees. You also detect something nutty: almonds. The finish is long and pleasant.
This unusual wine pairs well with a variety of dishes, from sharp cheese to buttery chicken and fish dishes.
