Domaine de Châtenoy Menetou-Salon Blanc is made from white grapes harvested separately by soil type. This process takes place very slowly in stainless steel tanks, where the temperature is closely monitored. Only after this first fermentation is the young wine from calcareous clay soil blended. It is then left to rest on its lees (yeast) for several months. This method results in a delicious white wine that is bottled in April of the following vintage. It then has a vibrant bouquet with grassy notes and pure Sauvignon Blanc characteristics such as green apple and boxwood, enriched with floral scents, a hint of spices, and a beautiful, juicy, fresh taste and finish. A wine, therefore, to be enjoyed as an aperitif or at the table with refined and pure fish, shellfish, and seafood dishes, light white meat preparations, and with salad with goat cheese.
Menetou-Salon essentially has two taste styles. The dry, stony, and limestone-rich soil produces crisp wines with length, while the calcareous clay soils yield fruity, supple wines. The wines of Pierre and Isabelle Clément belong to the latter category. Recently, their daughter Anne has also joined the family. The fact that the Clément family has extensive experience in winemaking in the Menetou is evident from sources dating back to 1560, which tell of the meritorious wines of a certain Sébastien Clément. In 1891, it was described at the time the revolutionary way in which Pierre-Alexandre Clément combats mildew was used and how he became the founder of the Menetou-Salon grape growers' association. Now, Isabelle and Pierre Clément run the business, representing the fifteenth generation.
The climate is temperate. The soils consist of calcareous clay strewn with clusters of small fossil oyster shells: argilo-calcaire du Kiméridgien.
