    Dry, Organic Pinot Gris from Alsace

Sophie Schaal Pinot Gris owes its distinctive character to the clay-rich soil in which the grapes grow. This terroir gives the wine a firm structure, remarkable for an Alsace wine. Hand-harvested grapes ensure optimal quality and grape expression.

    Food pairing and tasting note

    On the palate, Sophie Schaal Pinot Gris strikes a perfect balance between freshness and structure. The lively acidity forms the foundation for a rich taste experience. Fresh notes of green apples and pears blend with ripe quinces. Exotic spicy undertones of cinnamon and clove enrich the whole. The round texture and long finish make this wine particularly versatile. It pairs excellently with roasted pork in pear sauce. Creamy pastas, poultry, and seafood also form harmonious combinations. When thinking of this Pinot Gris, do not think of the spicy Asian dishes that pair with other P.G.s. Instead, look for pure and recognizable flavors without too much umami.     Sophie schaal and the vinification

    The Sophie Schaal Pinot Gris is vinified with utmost precision and patience. Located at the foot of the Vosges in the Alsace in Saint-Hippolyte. After manual harvesting, the grapes are gently pressed as whole bunches. Slow, static settling follows in temperature-controlled tanks. Natural fermentation proceeds slowly and coolly, sometimes lasting up to three months. This careful approach preserves the ‘sense of place’. After fermentation, the wine ages for a few more months to develop its full potential. The result is a wine that needs time to reveal its true nature. The philosophy behind Sophie Schaal Pinot Gris revolves around respect for the terroir. The clay soil plays a crucial role in the character of this wine. It gives it not only structure but also a unique identity. Every detail in the production process is aimed at preserving and enhancing this terroir expression.
