    Fruity Pinot Noir in the typical Southern French style

The Paul Mas Réserve Pinot Noir Saint Hilaire is a delicious, fruity red wine from the Languedoc-Roussillon with a velvety texture and fresh notes of red fruit. This wine offers excellent value for money! On the nose, it is less barnyard-like than a Burgundy, but emphasizes wild strawberries, raspberries, and black cherries. Pinot Noir is not common in the south of France. This is because temperatures are usually too high for this cool-climate grape. However, in a few cooler spots, such as at Paul Mas in Saint Hilaire near Limoux, this grape thrives exceptionally well. A “single vineyard” wine from an area where the grape can ripen slowly and develop its rich aromas.

    This Pinot Noir has an elegant nose revealing cherries, strawberries, redcurrants, soft spices, and a hint of vanilla. The wine has a creamy texture, a velvety finish, and is smooth to the last drop. Harsh tannins are completely absent. The grapes are harvested mechanically at night to prevent oxidation and preserve the fresh acidity. This wine ages in oak for six months, resulting in subtle wood notes and well-integrated aromas. The Paul Mas Réserve Pinot Noir is perfect for a glass after a long workday. It also pairs beautifully with charcuterie, poultry such as pheasant and guinea fowl, and soft cheeses. Try it with a piece of Hollandse Maaslander as well.

    Domaines Paul Mas currently owns over 800 hectares of vineyards and collaborates with various farmers, providing them with an additional 1,312 hectares. This gives them access to no fewer than 40 different grape varieties, both local and international, and an enormous range of soils in the Languedoc. Paul Mas Estate is situated between Pézenas and Montpellier, just 10 km from the Mediterranean Sea. The vines for the Paul Mas Réserve Pinot Noir are located in an exceptional setting, surrounded by olive trees, pine forests, oaks, and orchards. The vineyards are exposed to the sun from the north, south, and west, and are cooled by the Mistral and Tramontane winds. The gravelly clay and limestone soils on the slopes of the Hérault Valley and the calcareous soils near the Thau hills impart the grapes their unique aromas.
