    Molto Classico is this Chianti

    Chianti Classico wines are certainly no strangers these days! In fact, Chianti Classico has taken on the allure of an absolute quality wine that compares perfectly with a Rosso di Montalcino or a Vino Nobile di Montepulciano. The same is true of the Poggio Civetta Chianti Classico. A magnificent wine made from Sangiovese and Canaiolo. A touch of Cabernet Sauvignon completes the blend. In the glass, the Poggio Civetta Classico presents itself as a wine with a deep ruby ​​red color. A wine made from the Sangiovese grape can never be very purple, as it is very susceptible to rapid discoloration. Meanwhile, the nose is refined, with aromas of wild berries, violets, and a spicy finish. On the palate, it is a full-bodied glass, again with plenty of forest fruit and a hint of oak.

    The wine retains its freshness until the end. It has plenty of body and the tannins are well balanced. Truly a wine that is gastronomically versatile with rich dishes such as Bollito misto and steak marinated and grilled in Aceto Balsamico and aged cheeses such as Parmigiano.

    Vinification

    The manual harvest of the grapes for the Poggio Civetta Chianti Classico takes place between mid-September and mid-October. The grapes are gently crushed, after which vinification takes place. The must rests on the skins for 1 to 2 weeks. In this way, all the aromas and color are preserved in the wine. The wine ages for 9 months in small and large barrels. The result is a magnificent, intense wine. A true gem!

    Chianti Classico

    The Chianti wine region stretches roughly between Florence and Siena and covers about 70,000 hectares. 7,200 hectares of vineyards are reserved exclusively for Chianti Classico. Sangiovese is the main grape variety. Traditionally, this can be supplemented with other legally permitted varieties such as Canaiolo Nero, Colorino, and Mammolo for everyday wines, but also with some internationally great varieties such as Cabernet Sauvignon, Merlot, and Syrah. Stricter regulations, better terroir, and ultimately better quality than "ordinary" Chianti. Chianti Classico is a designated appellation of origin (D.O.C.G.) that holds its place within the larger Chianti wine region. Many winemakers in the area have united in the Chianti Classico Consortium. The consortium uses the famous black rooster as its label and is therefore instantly recognizable.
