Allegrini Palazzo della Torre is one of the wines that made the Allegrini family world-famous overnight. Allegrini Palazzo della Torre is a traditional blend of Rondinella and Corvina with a very small amount (5%) of Sangiovese. The wine is somewhat similar to a Ripasso, but with more body and complexity. Just like for the Amarone, a portion of the grapes for Allegrini Palazzo della Torre is dried and then added to the grapes processed immediately after the harvest. This ruby-red wine pairs easily with many Italian dishes: risotto with red wine and radicchio, porcini mushrooms with pork, classic pasta dishes such as Puttanesca and Amatriciana, lasagna, roasted and grilled meats, but is also delicious with Parma ham from the Zibello pig, and medium-aged cheeses such as Parmigiano Reggiano, Pecorino, and Monte Veronese.

The wine has a fantastic nose: an abundance of ripe black fruit, smoky spiciness with hints of tobacco, coffee, chocolate, and vanilla. On the soft and spicy palate, you taste dried and overripe fruit, which slowly transitions into a persistent and smoky finish with a pleasant bitterness. The mineral, spicy finish is particularly long. The result is a wine with a very round and soft, velvety mouthfeel, featuring very ripe notes and delicious cherry aromas.
Because the vines already have an average age of 42 years, the yield is naturally low (old vines produce less), but as a result, the concentration of flavor is high. The harvest takes place in the first week of September (hand-picked and with strict selection).
Some of the grapes are destemmed and crushed, while others are dried first and not pressed until mid-December. After vinification and malolactic fermentation, the wine is aged for 15 months in partially used oak barrels. After bottling, it takes another 7 months before the wine is released onto the market.
