Here, fermentation takes place for 10 days at a controlled temperature of 18-20°C using carefully selected yeasts. The wine ages for several months on the fine lees in steel tanks before being bottled and subsequently resting in the barrel for two months.

But also from boring bubbles to a complex wine with great depth. The Ai Galli Ribolla Gialla here has a beautiful light straw-yellow color with green nuances. The nose is characterized by floral scents of white rose together with the freshness of an apple. Also a clear citrus note. The taste is immediately appealing, and is characterized by freshness and mineral notes with a good balance. Delicious with soft cheeses like Provolone and Tallegio, but also with recipes based on mushrooms and vegetables such as gratinated zucchini.
Ribolla is a white grape variety widely planted in the northeastern province of Friuli in Italy. You can also find this variety in neighboring Slovenia, where it is known as Rebula, and on the Greek island of Cephalonia, under the name Robola. However, it comes into its own best in the Colli Orientali and the Collio in Friuli. It eventually became famous thanks to a group of avant-garde winemakers who fermented the grapes with their skins in clay amphorae and then allowed them to oxidize. This produces an expressive wine, but you do lose the identity of the grape and the region. To a less extreme extent, this style of winemaking was found more frequently in this region; due to the short skin contact, the wine kept well for longer.
