    Catarratto and Carricante … who doesn't know them?

    It is, of course, not at all surprising if you have never heard of the aforementioned white grapes. After all, they are only found in Sicily around Mount Etna. Oh yes, Etna… but isn't only red wine produced there? That is true, but since the 1980s, winemakers have started experimenting with white grape varieties, including Carricante, and these are actually quite interesting. And especially this Produtti Etna Nord Bizantino Bianco, a textbook example of a “mineral” wine from volcanic soil.

    What an interesting wine this is! On the nose, intense elderflower, cedar, and a deep smoky note. Fresh, with spicy acidity that even has savory and salty notes... A long, almost salty finish with a hint of flint. Truly a wine that asks you questions... it is almost like a rich Chenin Blanc. Wax, licorice, eucalyptus, green plums, green apple, mushrooms, lemons and smoke. Almost too many to mention. The Produtti Etna Nord Bizantino Bianco e veramente molto interesting

    Mount Etna provides mineral soil

    Research shows that the soil on the north side of Mount Etna is particularly rich in various minerals. And it is precisely these minerals that can impart extra complexity to the wine. Naturally, you do not taste the minerals themselves, but their presence ensures that very specific aromas are created during vinification. But there is more to discover. The Carricante grapes are grown at a considerable altitude (600 to 700 meters). And the ‘Grecale’, a Mediterranean sea breeze from the northeast, ensures that the salt adheres to the grape skin. The grapes are picked in crates and immediately cooled to 8°C. This is followed by cryofermentation at 5°C to preserve as many fresh aromas as possible.

    What are we eating at Bizantino Bianco from Produttori Etna Nord?

    Delicious as an aperitif with vitello tonnato. Also great with Gennaro's super simple Bucatini alla tonno. Can also be paired with other fish dishes. It is perfect with cod, smoked mackerel, or the classic Belgian fish waterzooi.
