The quality of this sparkling wine, Cà dei Frati Brut Methodo Classico, is truly surprising. The grapes, so rich in firm acidity, reminded us of sparkling wines from Franciacorta and even Champagne! 10% Chardonnay has been added to the Turbiana to beautifully and respectfully round off the youthful exuberance of the indigenous vine. After a period of at least 24 months on the lees in the bottle, the sparkling wine comes to life with great elegance.
A fine, continuous “perlage” (what a beautifully chic word that is for the bubbles in the bottle!). A golden-yellow color with green highlights. Fragrant on the nose, with hints of biscuits and hazelnut, hay, and even spiced pipe tobacco. The silky carbonation makes room for the acidity to stimulate saliva production. Perfect as an aperitif, but also capable of showcasing the full versatility of the classic method when accompanying meals. Cà dei Frati Brut Methodo Classico pairs excellently with freshwater fish such as salmon trout or carp. With poultry, cold white meat, and summer salads. Also pairs well with high-quality Parmesan cheese, but is also excellent with a Burrata with grilled grapes. Give it a try and you will be amazed.
The Ca ‘dei Frati company has been known since 1782. This is confirmed by a document referring to “a house with a cellar in Lugana in the Sermion district, known as the place of the brothers”. In 1939, Felice Dal Cero, son of Domenico, formerly a winegrower in Montecchia di Crosara near Verona, moved to that same house in Lugana di Sirmione and immediately realized the potential for viticulture in the area. After working in the vineyard and cellar for thirty years, his son Pietro participated in the establishment of the DOC in 1969, bottling his first wine labeled Lugana Casa dei Frati, later named Ca ‘dei Frati. Pietro Dal Cero passed away in 2012, leaving the cultural legacy to his wife Santa Rosa and children Igino, Gian Franco, and Anna Maria, who run the company with the same passion and determination.
