The harvest for Domaine Michelot Meursault is largely carried out by hand. A very strict manual selection takes place in the cellar to ensure the highest quality. The grape bunches are lightly crushed and then macerated with the skins for about 6 to 12 hours at a controlled, cold temperature. Alcoholic fermentation takes place in wooden vats, followed by malolactic fermentation. Here, the sharp malic acids are converted into beautiful, round, and soft lactic acids. Subsequently, the wine ages for 10-12 months in wooden barriques, 15% of which are new, and then for another 5-6 months ‘sur lie’ for the perfect balance.
The estate has been owned by the Michelot family for six generations. The estate now covers more than 19 hectares, including a number of prestigious 1er cru wines. Michelot consciously chooses to limit anti-disease treatments on the vines. They prefer a carefully planned plowing program to keep the soil healthy. The harvest in the vineyards is carried out by manual selection of the best grapes. To maintain their independence as growers and winemakers, they are also not part of an organized system of organic viticulture.
