Thyme, lavender, and lemon balm – this Fibbiano Vermentino is a lively, dry white wine that immediately catches the eye. The color is light golden yellow with a green shimmer. The wine comes from the rolling hills of Pisa, Tuscany, and is made of 100% Vermentino-grapes. They grow on soils full of fossil seashells, between the Tyrrhenian Sea and the River Era.
The influence of the terroir is clearly noticeable in the subtle salty note, which makes this wine special. An excellent choice for those who enjoy mineral white wines with personality. Fattoria Fibbiano, the producer, has been working with respect for indigenous grape varieties since 1560. Tip: also try their red wine from the Ciliegolo grape and the sparkling Pet-Nat!
The taste of this Fibbiano Vermentino is soft and mineral, with a fresh, persistent structure. The acidity is beautifully balanced, keeping it lively. On the palate, you can detect wild apple, a slight bitterness, and a subtle grassy edge. The briny undertone is reminiscent of a cooling sea breeze. Preferably serve at 12 to 13 degrees.

Fattoria Fibbiano It is situated at an altitude of 120 meters, in the heart of the Tuscan landscape. The vineyards yield an average of 70 quintals per hectare. Planting is carried out with a density of 2.20 by 0.80 meters. Pruning is performed using spurs, aimed at optimal grape quality.
In early September, the harvest takes place by hand, early in the morning to preserve freshness. The grapes are immediately cooled with dry ice (CO₂) to prevent oxidation. The wine then ferments for approximately thirty days at a controlled temperature. Subsequently, the wine ages for six months in cement tanks and another six months in the bottle. 20,000 bottles of this wine are produced annually.
