The Chardonnay grapes for Le Patapouf are picked by hand specifically at night to preserve optimal freshness. Everything is illuminated with powerful spotlights to select the grapes as carefully as possible. After the harvest, the grapes undergo a gentle pressing, after which they begin their journey in wooden barrels. Both new and used oak barrels are used to age and refine the wine. After a year, the important phase takes place in which wines from different barrels are blended to achieve the ultimate balance. Subsequently, the wine undergoes several months of bottle aging to fully settle. Only then is Le Patapouf ready to be enjoyed. Patience is a virtue.
