No rosé is as well-known as the MiP Rose Classic from the Domaine des Diables winery. A huge success story that is in high demand and a wine that sells itself. Consequently, it is a massive hit year after year on many popular terraces and wine bars. And let's be honest, we understand why. This deliciously fruity and elegant MiP rosé is truly fantastic to drink! The MiP Rose Classic has a fruity, elegantly spicy, floral, and above all pure character, and is wonderful as a light-footed aperitif and – when drunk young – a pleasantly fresh accompaniment to light Mediterranean dishes such as a tasty Salade Niçoise.
The name MiP* actually came about by a funny coincidence. MiP stands for *Made in Provence*, something owner Guillaume Philip and his wife Virginie want to emphasize in their wine. After all, rosé from Provence has that ultimate Mediterranean feeling of sunshine, laissez-faire, the good life, and enjoying fruity, elegant, and pure wines. Guillaume and Virginie Philip want to convey that delightful Mediterranean feeling with their wines. That is how the idea arose to emphasize that the wine is made in Provence—Made in Provence, in other words!
In 2007, they produced their first wine, the now-famous MIP rosé. In their pursuit of excellent wines, the wines and Guillaume & Virginie Philip themselves have already won multiple prestigious awards from various competitions and wine guides, including the Prix d’Excellence at the Concours Général Agricole for nine consecutive years (!). An unprecedented achievement!
Provence has a subtropical climate with warm summers and fairly mild winters. On the predominantly stony soil of the estate stand mainly syrah, grenache, cinsaultand Rolle (Vermentino) are planted. Each plot is vinified separately in order to apply the perfect vinification method for each soil type. The soil around the estate is composed of red clay, loam, sand, and stones, an ideal composition for the production of very flavorful rosé wines that are rich in aromas.
Moreover, due to the warm and dry climate, there are few diseases in the vineyards, and the use of pesticides is therefore hardly necessary. This nature-friendly approach naturally has a positive effect on the wines of Guillaume & Virginie Philip.
For the MIP Classic, the grapes are picked at night and stored at around freezing point after harvesting. The cooler the grapes, the less color from the berries disperses into the juice. This results in a very lightly tinted rosé with aromatic and flavor nuances of red berries, peach, and citrus fruit, alongside a seductive scent of rose petals.
