Often, you simply want to always have a wine in stock to enjoy with guests and then continue pouring at dinner or lunch. And the Paul Mas Chardonnay Viognier Vignes de Nicole happens to be exactly such a wine. Delicious to drink on its own and pairs well with many dishes. No harsh edges or overly intense acidity. A real crowd-pleaser. A wine for everyone.
The Paul Mas Chardonnay Viognier Vignes de Nicole has a bright straw-yellow, somewhat golden color. Fine aromas of Doyenne de Comice pear, tropical fruits such as pineapple and mango, as well as peach and citrus with a hint of vanilla and toast. Fresh and soft on the palate with a long finish without coming across as alcoholic. Unfortunately, the origin of the vineyard's name remains a mystery to us as well.
All wines are made by Michel Mas, the son of Paul Mas, in collaboration with the Australian oenologist Richard Osborne, who was specifically brought in to make the white wines; as an Australian winemaker, he has extensive experience in making crisp white wines in a hot Mediterranean climate. The vines are approximately 20 years old and stand on clay and calcareous soil. The blend for the Paul Mas Chardonnay Viognier Vignes de Nicole currently consists of Chardonnay 40%, Sauvignon Blanc 25%, Viognier 25%, Picpoul 10%. Chardonnay ages for 4 months in new oak barrels. Viognier undergoes no wood aging or malolactic fermentation, which preserves plenty of freshness in the wine.
The history of Domaine Paul Mas begins over a century ago, when Auguste Mas cultivated only 9 hectares of vineyards in the Midi. In 1934, his son Raymond Mas purchased the Domaine de Montredon, and in the years that followed, the estate was expanded by his sons Paul and Maxime to an area of 120 hectares. Today, the Domaine is managed by Paul's two sons: Jean Claude and Michel. The vineyards do not form a contiguous block but are located in very different zones within the Midi, in terms of climate and soil. The philosophy of ‘Les Domaines Paul Mas’ is aimed at preserving the typical characteristics of the soil and grape variety, while simultaneously presenting a wine that meets the demands of today's consumer: plenty of fruit, concentration, color, aroma, and flavor. They seek the right place for the right grape.
Paul Mas received the award for “Best French Wine Producer” at the Spring 2019 edition of Mundus Vini. In addition to this wonderful award, their wines were also awarded 14 gold and 9 silver medals. The prizes are well-deserved! Enjoy the Paul Mas Chardonnay Viognier Vignes de Nicole.
