Vinification and climate

The Chardonnay grapes are carefully selected and destemmed, after which they are kept with their skins at a low temperature for a few hours to extract the delicate aromas. Fermentation takes place in stainless steel tanks, and the wine subsequently ages for four months in French oak barrels. This combination of traditional techniques and modern technology results in the refined San Marzano.

In 1962, 19 winegrowers from San Marzano joined forces and founded “Cantine San Marzano”. Today, this cooperative numbers more than 1,200 growers and is responsible for a beautiful line of high-quality wines. They utilize modern and technologically advanced facilities to further perfect the ancient wine tradition of Puglia.

San Marzano is located in Puglia, in the heart of the highly acclaimed DOC “Primitivo di Manduria”, between two seas (the Ionian and the Adriatic). The provinces of Taranto and Brindisi offer a landscape where vineyards and olive trees grow side by side on the famous iron-rich red soil. This soil and the Mediterranean climate play an essential role in the production of high-class wines.
