    The unique production process of Fantini Novello

    Novello is created via the method ‘Macération carbonique’, a special winemaking process that gives this wine its character. The grape bunches for the Fantini Novello are crushed under their own weight in a sealed tank. Carbon dioxide is formed during this process, but because the must is in a closed tank, it does not come into contact with oxygen. This oxygen would actually be required to start proper fermentation.

    In this vinification method, extra carbon dioxide is often injected into the closed tank. The process that follows is called carbon dioxide maceration and takes a total of about 10 days. The carbon dioxide penetrates the skins of the Montepulciano and Sangiovese grapes, thereby extracting color and aromas from the skins. This is followed by a short fermentation of 4 days.

    The result is a deep purple, very fruity and fragrant wine. After this process, the Fantini Novello is bottled immediately and is ready to be drunk young. Essentially, the grapes go straight from vineyard to dinner table.
