This Paul Mas Cabernet Sauvignon from the Mediterranean south of France is a full-bodied, round red wine with soft tannins and an accessible style. Dry on the palate, lightly spicy, and with refined earthy notes. A delicious table wine that is versatile and appeals to almost everyone.
Domaines Paul Mas from Pézenas, Southern France, has existed since 1908 and produces very tasty wines where terroir, origin, and sustainability take precedence. Vineyards at higher altitudes, with lower yields. Wines, therefore, with extra flavor, finesse, and a message. This Paul Mas Cabernet Sauvignon is no exception. On the nose, lots of cassis, followed by various spices and some cedar. Essentially a Bordeaux without a harsh edge. This wine is full and round in flavor but remains supple. Delicious ripe fruit with excellent intensity. This wine pairs well with many dishes, but can also simply be served on its own during a cozy evening with friends. Cheeses, charcuterie, a Dutch meatball, a Coq au Vin, kale with a Dutch smoked sausage. Bring on that Paul Mas Cabernet Sauvignon.. The winemaker of Domaines Paul Mas, Jean-Claude Mas, was born into a winemaking family in the Languedoc, in Pézenas. Jean-Claude Mas is often described as a pioneer of the New Languedoc, belonging to the “new wave of winemakers” of French wines, one of those with a mission to restore the Languedoc to its former glory.
Domaines Paul Mas innovates and pays attention to the taste of today's consumers. But above all, he holds fast to the unique character of the region and the French terroir. It seems, especially with his competitive price, that he has struck gold here. In any case, the awards are pouring in! He is also the winemaker behind the well-known Arrogant Frog line.
The company is located between Pézenas and Montpellier, not far from the Mediterranean Sea (10 km). Jean-Claude Mas started Domaines Paul Mas there in 2000 on 17 hectares of family land. Grape varieties planted there include Syrah, Cabernet Sauvignon, Mourvèdre, Carignan, Grenache noir, Grenache blanc, Merlot, Cabernet Franc, Cinsault, Marselan, Viognier, Chardonnay, Sauvignon blanc, Pinot blanc, Piquepoul, and Vermentino, with which they produce their signature wines: Clos des Mûres, Belluguette, Moulinas, and Savignac, as well as the red and white Paul Mas Grande Reserve wines.
Yields vary from 35 to 60 hl/ha. Strongly influenced by the gravelly clay and limestone soils on the slopes of the Hérault valley, as well as the calcareous, fossil-rich soils on the hills leading to the Thau marshes, the wines, although extraordinarily charming, possess a certain robustness. They express a strong sense of their terroir in the style of Jean-Claude Mas. The wines are produced under the appellations Languedoc, Languedoc Pézenas, Grés de Montpellier, and Pays d’Oc.
