    Liquid gold in your glass

    In our assortment, we have the red Neropasso from the Biscardo family, and using the appassimento method, they produce class wines that appeal to a great many people. The good news is that they also make a delicious white wine using the same method: the Oropasso. A delicate wine with a floral character and plenty of fresh citrus and ripe yellow fruit. It looks just like liquid gold in your glass! The Biscardo family has over 150 years of experience in winemaking, so they have more than earned their "roots" in the wine world. Their wines are known for their pleasant drinkability and offer excellent value for money. So that is a lot of flavor and a lot of wine for this price.

    Appassimento method

    The white Oropasso wine comes from just outside the Soave region (Veneto) and is made of 40% Chardonnay and 60% Garganega grapes. Two grape varieties that do very well in this region. The vineyards for the Oropasso are located on a slightly permeable soil, with a mixture of clay, sand and silt. As mentioned, the method of 'appassimento' is applied to white wine - just like with red Neropasso.

    Appassimento is a manual and intensive process. A little explanation. The thinnest bunches are used where the grapes are not too close together so that the air around them can circulate properly. Otherwise rot will occur and that is not the intention. The grapes are dried in perforated boxes in the 'fruttaio' (a large ventilated room). Drying takes several months until the grapes have lost sufficient moisture and the aromas in the grapes are super concentrated.

    The grapes are pressed, and the subsequent fermentation lasts 15 days in stainless steel tanks at a controlled temperature of 13-14 °C. The wine then rests in stainless steel tanks on its lees for at least 5 months. This results in a fuller flavor and greater complexity.

    Oropasso Biscardo taste and food pairing

    The Oropasso wine is sunny golden yellow in color with a green sheen. On the nose, you immediately detect delicate aromas of floral notes, with plenty of fresh citrus and ripe yellow fruit. On the palate, it is fresh and mineral, very well structured and balanced. A hint of vanilla in the long, balanced finish.

    The Oropasso Biscardo Veneto is a wine that won't bore you easily. Thanks to its freshness, the wine is perfectly suited to risotto with shrimp and lemon zest, pasta dishes, flavorful vegetable and fish soups, fish, shellfish, and white meat. It is also delicious with a cheese board featuring (Italian) cheeses.
