You notice delicate layers of ripe apple, citrus, and a hint of almond. Primary, secondary, and tertiary aromas are all present. The mousse is very fine. Maison Boizel, founded in 1834, is located in the heart of the Champagne region and is proud of its long tradition of producing high-quality champagnes. It is one of the few major Champagne houses that is still family-owned. It is now run by the fifth generation. The house is situated on the famous Avenue de Champagne in Épernay. Joyau, this top cuvée from Boizel, is made in an Extra Brut style and consists of 60% Pinot Noir and 40% ChardonnayFor this wine, the grapes are carefully selected from the villages of Mailly, Cumières, and Chigny les Roses (all for Pinot Noir) and Avize, Chouilly, and Vertus (for Chardonnay). Before disgorgement, the wine aged for 14 years on the lees (yeast residue).
