The Delheim Chenin Blanc Wild Ferment sounds like an exciting wine! And it is, in a way… This uses local indigenous yeast strains. No selected yeasts from a laboratory here, which happens so often and so frequently. Selected yeast strains often result in somewhat generic aromas. The result here, however, is that the wine gains an extra “twist” and increases in complexity. This gives the Chenin Blanc an extra dimension! The result is a beautifully full-bodied, layered wine with notes of apricot, yellow apple, honey, fennel, roasted oats, and subtle influences of wood. This Chenin Blanc is crisp, clean, and well-balanced. Delicious to enjoy on its own, but also with pan-fried sole or a pot of mussels with some extra sour cream added.
The fruit from the two vineyards was treated differently in the cellar, with the Bobbejaan vineyard grapes being pressed whole, while the grapes from the Ou Jong vineyard were destemmed and crushed. Fermentation with indigenous yeast strains takes place partially (34%) in stainless steel tanks, with the remainder in 225- and 500-liter oak barrels. Fermentation occurs spontaneously and is kept at a low temperature. Subsequently, the Delheim Chenin Blanc Wild Ferment ages on the lees ('sur lie') for another 7 months. As a result, the wine gains complexity and becomes creamier and thicker in texture.
In the heart of the Stellenbosch region, at the foot of the famous Simonsberg, lie the beautifully maintained vineyards of the German wine family Sperling. The country house was purchased in 1938 by Hans Otto Hoheisen and his wife Deli, hence the estate name Delheim. In the 1950s, it was taken over by Michael Sperling and his wife Vera. They laid the foundation for the wine company as we know it today. Delheim is best known for its Chenin Blancs, such as our Delheim Chenin Blanc Wild Ferment, and beautiful Pinotages.
