    A lovely, full-bodied Chardonnay with a touch of oak.

    A delicious, balanced wine that is full-bodied but not too heavy. The Paul Mas Nicole Vineyard Chardonnay Reserve has a long finish and is beautifully dry. Made from 100% Chardonnay, this is a Single Vineyard wine, sourced from their own ‘Nicole’ vineyard in Montagnac. It has a bright golden color with straw-yellow hues. On the nose, it opens immediately but remains very elegant. It is all very refined and not over the top! Lots of ripe tropical fruit, pineapple, guava, walnut, the fresh scent of linden blossom and stewed quince. Additionally, a light hint of vanilla and toasted bread. On the palate, fresh flavors of green and red apples come to the fore, accompanied by candied citrus fruit. This beautiful Paul Mas wine is delightfully fresh, dry yet fruity, with a light to medium body. In the finish, the pineapple, limestone, and lime linger pleasantly.

    Paul Mas Nicole Vineyard Chardonnay Reserve: Vinification with great care

    Much attention has been paid to the Paul Mas Nicole Vineyard Chardonnay Reserve! This includes destemming, maceration with 3 hours of skin contact, pneumatic pressing, and racking at 5°C. Subsequently, 60% of the must goes into new French oak barrels, where it ferments for a month at a low temperature (16°C) and ages for 4 months. The other 40% is fermented in stainless steel tanks. During the aging process, ‘batonnage’ is used—a winemaking technique involving stirring the dead yeast lees to achieve a creamier texture. The oak-aged wine is then blended with the wine from the stainless steel tanks before bottling.

    Domaines Paul Mas, a quality group

    The great-grandfather of the current winemaker Jean-Claude Mas, Auguste Mas, bought the family's first vineyard in 1892, when he acquired 9 hectares near Montagnac. The business continued to grow. In 1987, Paul Mas gave 35 hectares to his son, Jean-Claude, who created Domaine Paul Mas three years later.
    Today, Domaines Paul Mas owns more than 600 hectares of vineyards and also collaborates with various farmers, giving them an additional 1,312 hectares at their disposal. This allows them access to as many as 40 different grape varieties, both local and international, as well as an incredible range of different soils in the Languedoc. The philosophy of ‘Les Domaines Paul Mas’ is aimed at preserving the terroir character and grape variety, while simultaneously presenting a wine that meets today's consumer demands: plenty of fruit, concentration, color, aroma, and flavor.
