After a week of hard work, this red South French wine is certainly welcome on a Friday evening. It features sultry cherries, ripe red and black forest fruit, combined with smoky and earthy notes and a hint of sweet spices. This dry Paul Mas Reserve Single Vineyard Merlot has a soft, creamy texture that melts deliciously in the mouth. The remarkably mild acidity makes the wine even more accessible. The deep purplish-red color and aromas of plum, mulberry, morello cherry, and blackberry are enchanting. Later, nuances of cocoa beans, dark chocolate, and gingerbread spices are added, thanks to aging in oak. The blend ages 70% in American oak barrels and 30% in French oak barrels.
This Merlot Reserve pairs excellently with leg of lamb with a Mediterranean herb rub from the BBQ. It is also delicious with dishes such as venison pepper and boeuf bourguignon.
Winemaker Jean-Claude Mas, born into a winemaking family in the Languedoc, is known as a pioneer of the “New Languedoc”. He aims to restore the Languedoc to its former glory. The company, established in 2000 on 17 hectares of family land, is situated between Pézenas and Montpellier, close to the Mediterranean Sea. Paul Mas Reserve Single Vineyard Merlot is a true Paul Mas wine. The planted grape varieties include Syrah, Cabernet Sauvignon, Mourvèdre, Carignan, Grenache noir, Grenache blanc, Merlot, Cabernet Franc, Cinsault, Marselan, Viognier, Chardonnay, Sauvignon blanc, Pinot blanc, Piquepoul, and Vermentino. The wines, such as Clos des Mûres, Belluguette, Moulinas, and Savignac, as well as the red and white Paul Mas wines, vary in yield from 35 to 60 hl/ha. The soils consist of gravelly clay and limestone on the slopes of the Hérault Valley and calcareous, fossil-rich soils near the Thau Marshes. The wines have a robust character and a strong sense of terroir in the style of Jean-Claude Mas, produced under the appellations of Languedoc, Languedoc Pézenas, Grés de Montpellier, and Pays d’Oc.
