The Paul Mas Grande Réserve Chardonnay is a fantastically delicious white wine made from the best organic grapes of Domaines Paul Mas. You taste vanilla, apricot, peach, and vanilla. A hedonistic glass for lovers of a nice, rich, full-bodied wine. ChardonnayThe wine ages for 9 months in new oak barrels (50% American oak and 50% French oak). It is intensely golden yellow in color. Butter and toast on the nose, honey, apricot, caramelized pear with a slight bitterness during the long finish. On the palate, fresh citrus fruits come to the fore combined with floral aromas and light toast. A full-bodied, creamy texture. Delicious with Asian-marinated pork belly, and of course, pan-fried sole.Sole a la Meunìere but also delicious with a cheese omelet.
Domaines Paul Mas owns more than 600 hectares of vineyards and collaborates with various farmers, giving them an additional 1,312 hectares at their disposal. This wine is made from grapes from their own vineyards. However, this provides them with access to as many as 40 different grape varieties, both local and international, as well as an incredible number of soils in the Languedoc. The philosophy of ‘Les Domaines Paul Mas’ is aimed at preserving the typical characteristics of the soil and grape variety, thereby presenting a wine that meets today's consumer's demands: plenty of fruit, concentrated color, aroma, and flavor. Currently, 23% of Domaines Paul Mas's vineyards are organic, and every wine estate is Terra Vitis certified and has a high environmental value, level 3. The aim is to eventually switch to organic farming as much as possible. That is better for nature, the winemaker, and the drinker!
About 20 years ago, a very important change was made in the Languedoc. The IGP Vin de pays d’Oc was introduced. This wine is designed to meet the demands of the modern consumer, who has higher standards for quality but also desires accessible wines made from well-known grape varieties. It is produced throughout the Languedoc-Roussillon. The legal standards for this wine are less stringent than those of the individual appellations. Grape varieties from outside the region may be used for this wine.
