There were times when, if you talked about white wine, you spoke of Sancerre or Chablis. Because wine came from France. Simple as that! Nowadays, Chardonnay (from which Chablis is made) comes in all kinds of qualities, but this Domaine de Geneves Chablis ensures that the benchmark for white wine is set once again. The prime example of a true old-school terroir wine. In this Domaine de Geneves Chablis, a subtle hint of minerality emerges due to the chalky, fossil terroir from the Kimmeridge era. Really a bit like crushed shells, some iodine as an undertone on the nose. Together with citrus, cold butter, and white fruit. It is a powerful Chablis, nice and full, a slightly creamy mouthfeel, and with a firm structure. Somewhat flinty in the finish. Best of both worlds: fresh and creamy at the same time! The Domaine de Geneves Chablis is made from 100% Chardonnay grapes grown on the hills in various villages surrounding the city of Chablis. Fermentation takes place in temperature-controlled vats where the wine undergoes alcoholic and malolactic fermentation.
And well, Chablis wines were always called Oyster Water, and not without reason! There is an absolute similarity with the briny, creamy, but also the crisp finish of the oyster flavor. A “match made in heaven”. And what about shellfish? Well, waiter, bring on that big platter of Fruits de mer. Sourdough bread and salted butter on the side. The Domaine de Geneves Chablis on the ice and go! Yummy!!! OK, it goes well with sushi too, you know! Also really not bad.
Basic Chablis is not a wine for aging. You must drink it at around 10 degrees. Everything for the best result.
This estate is located in the north of Burgundy, in the Yonne department, on the slopes along the Serein river, in Fleys, in the heart of the Chablis vineyard (halfway between Beaune and Paris). The typicality of the wines comes from the nature of the terroirs, which consist of petrified marl and limestone (Kimmeridgian), and from the continental climate (cold in winter and warm in summer). Chablis is a dry, mineral white wine with a protected designation of origin made from Chardonnay grapes. On the land, he manages the cultivation of the vines with passion, care, and respect: pruning in the winter, where the selection of each harvest determines the proper production of the plot. Stéphane grows Chardonnay on 21 hectares, spread across various municipalities (Fleys, Chablis, Chichée, and Serrigny). Every terroir, every exposure, every plant offers a characteristic that must be enhanced in the cellar.
