Indeed, a little extra. Yes, because besides the fact that this Domaines Ott Chateau de Selle Rosé is the absolute benchmark for French Provençal rosé, this is also a wine that develops after a few years of aging. While 95% of all rosés must be drunk within a year, this Domaines Ott Chateau de Selle Rosé does not need to be finished immediately. With a few years of aging, it actually becomes more complex and even more interesting. A true gastronomic wine, too. Also fantastic with Mediterranean dishes such as grilled tuna steak, grilled sea bass, pissaladière, but of course also delicious... how could it be otherwise, with the perfectly executed Nicoise Salad.
This light pink wine with golden hues releases aromas of citrus fruits and fruit blossom enveloped in herbs such as thyme, myrrh, and wild fennel. On the palate, the immediate effect is elegant and open, with subtle aromas with a lemony edge for a friendly finish of attractive length. Château de Selle Rosé combines various grape varieties from the Côtes de Provence appellation, including a majority of Grenache, creating the delicate color and wine character. Cinsault adds softness to the grapes. Syrah and Mourvèdre bring the friendly, soft fruit. A subtle balance between structure and finesse, this wine is a perfect illustration of the precision required to make a rosé. The Domaines Ott Chateau de Selle Rosé is a reflection of the complexity of its limestone hills and arid soil; austerity bathed in brilliant sunshine.
Château de Selle was the first estate acquired by ancestor Marcel Ott in 1912. It stands in Taradeau, near Draguignan, on land where only olive, lavender, and mulberry trees once grew. Not far from the Abbey of Thoronet, close to a former 18th-century residence of the Counts of Provence. Here, the soil consists of gypsum, red clay, dolomite, and sandstone mixed with gravel and stone, allowing for the production of very distinguished and elegant wines today. Situated on high inland limestone slopes, sheltered from winter frost, the estate enjoys a microclimate of mild winters, early springs, and warm, dry summers, always with abundant sunshine. Domaines Ott Chateau de Selle Rosé represents everything Provence stands for.
Vines are grown in terraced vineyards. Production is consistent, environmentally respectful, and balanced. The wines derive their flavors from the dry climate and the minerals in the soil, with an exceptional character. The average age of the vines at Château de Selle is nineteen years.
The Domaines Ott Chateau de Selle Rosé: it costs a bit extra. Not for every day, but dear wine lovers: it is worth it! A wine that lingers for a long time. In the mouth and in memory! A must-drink! Certainly every summer!
