This Paul Mas Grande Reserve Cabernet Sauvignon from the Languedoc is made from 100% Cabernet Sauvignon. The nose displays finesse and complexity with aromas of vanilla and spices combined with ripe black fruit and a hint of truffles. On the palate, this elegant wine shows ripeness and soft tannins with a long finish. Vinification takes place in barrels, after which the grapes are lightly pressed by a pneumatic press. The wine is then aged in barrels for malolactic fermentation. They use 70% American oak and 30% French oak. The wine spends 10 months in barrels.
Paul Mas Grande Reserve Cabernet Sauvignon is perfect paired with a nice rack of lamb or steak with a red wine sauce. It is also delicious enjoyed with a firm piece of aged Dutch crumbly cheese.
Les Domaines Paul Mas is a group of four family estates covering 100 hectares (250 acres) of vineyards on the hills bordering the Hérault Valley in the Languedoc in southern France. They are situated near the Mediterranean Sea, close to the town of Pézenas, which inspired the famous playwright Molière, and not far from beautiful historic sites such as the Canal du Midi (built in 1790 by Paul Riquet) and the Abbey of Valmagne.
Languedoc (formerly Coteaux du Languedoc) is a major appellation used in the Languedoc-Roussillon wine region in southern France. It encompasses dry table wines of all three colors (red, white, and rosé) from across the region. However, it leaves sweet and sparkling wines to other, more specialized appellations. Approximately 75% of all Languedoc wines are red, while the remaining 25% is distributed roughly halfway between white and rosé. This area covers the largest part of the Languedoc region and nearly a third of all vines in France.
