What a pleasant surprise! Bright in taste, with citrus, green apple, ripe yellow fruit and a lively, salty mousse – that is what you can expect from this striking sparkling wine. Fibbiano In Fermento Pet Nat stands out immediately due to its cloudy, straw-yellow color. This organic spumante from the Toscaanse heuvels Pisa is entirely made of Vermentino, grown on soils rich in fossil seashells.
Pét-nat is the abbreviation of pétillant naturel. In this process, the bubbles form spontaneously in the bottle, without the addition of extra sugar or yeast. This method of making sparkling wine appeals particularly to lovers of pure, unfiltered wines. Only 5,000 bottles per year produced, so it is rare. Drink it well chilled and enjoy – cheers! The In Fermento Pet Nat is lively, fresh, and slightly saline with a long finish. The mousse is energetic and playful. You taste ripe yellow fruit such as apricot and peach, with mineral notes derived from the calcareous shell soil. The wine is best enjoyed when served at approximately 8°C.

This wine is excellent as an aperitif, especially on warm days, and pairs beautifully with light fish dishes.
The vineyards of Fattoria Fibbiano They are located at an altitude of about 120 meters in the hills near Pisa. The vines are spaced 2.20 by 0.80 meters apart and yield an average of 70 quintals per hectare. They are pruned with spurs to enhance quality. The harvest is done manually in early September during the coolest morning hours.
After harvesting, the grapes are gently crushed under CO₂ to prevent oxidation. This is followed by gentle pressing, and the juice is cooled to 4°C to clarify the must. Once the sediment has been removed, the temperature rises to 14°C. At that point, the first fermentation is halted.
The characteristic bubbles of this wine are formed during a second fermentation in the bottle, entirely according to the traditional méthode ancestraleAs a result, the natural character of the wine is preserved – and you taste something truly special.
