The white Gini Soave Classico is a delicious, fresh white wine from Northern Italy. The wine comes from the area near Lake Garda and is one of the classics that appears on many lists of top wines from Soave. A wine of great richness and complexity. Fruity nose, lemon zest, unripe pear, and tropical notes with pineapple. Also the well-known almond notes. Very beautiful acidity, suppleness, fruitiness, and minerality. Moreover, the grapes used to make this wine come from 80-year-old vines on volcanic soil. This gives the wine its exceptional concentration and a completely unique touch.
But what do we eat with this? Think of Sole with creamy shrimp sauce Plaice with Dutch shrimp pairs well with this wine. Cockles or delicious mussels also go well with it. All shellfish and crustaceans with a rich cream sauce will love being served with this wine. Or try risotto with asparagus. Rich salads are also highly recommended: salads with nuts, brie, or smoked chicken.
The Garganega grape is planted on the hillsides of Monteforte d’Alpone, part of the Classico area. The vines have an average age of 80 years and are rooted in a soil composed of volcanic rock and limestone. The six-hectare vineyard faces southeast and lies, depending on the plots within the vineyard, between 100 and 200 meters above sea level. There are 4,000 vines planted per hectare, with the branches trained using the Pergoletta Veronese method. The yield in the vineyard amounts to a maximum of 70 hectoliters per hectare, depending on the vintage. The manual harvest takes place in October, as Garganega is a late-ripening grape variety.
In the wine cellars, spontaneous fermentation takes place using wild yeasts. This is carried out in stainless steel tanks. To optimally preserve the freshness of the wine, Sandro does not allow malolactic fermentation. After alcoholic fermentation, the wine rests on its lees for at least six months in small stainless steel tanks.
