    Appassimento

    The ripe harvest of the Montepulciano grapes and the rigorous selection of the grapes for this Lunaria Bucefalo already take place in the vineyard. A portion of the grapes are dried using the appassimento method, whereby some of the moisture evaporates from the grapes and a higher concentration of sugars and flavor compounds develops within the grape. Subsequently, the grapes are further processed into wine. The fermentation process is spontaneous, meaning that the yeasts present in the air are used and without the manual addition of yeasts.

    Ripe, slightly sweet (appassimento) wine made from the Montepulciano Grapes. Blackcurrants and almonds on the nose as well as the palate; a beautiful, soft, slightly sweet taste with a hint of spiciness. A soft, long finish where the berry flavor lingers pleasantly.
