    Cherries, raspberries, and a hint of black pepper – those are the first impressions you get with the Pascal Jolivet Sancerre Rouge. This medium-bodied red wine comes from the French wine region. Sancerre at the upper reaches of the Loire and is made from 100% Pinot Noir. The chalky and limestone-rich terroir gives this wine its characteristic minerality and finesse. The taste is soft and smooth, with plenty of red fruit and a fresh, slightly spicy finish. Additionally, the beautiful balance between fruit and structure stands out. In short, an elegant red wine that makes an immediate impression.

    From Grape to Bottle: Natural Viticulture at Pascal Jolivet

    The grapes for this Sancerre Rouge are harvested by hand and carefully sorted. This is followed by a cold maceration of ten days, which ensures beautiful color extraction and soft tannins. Next, the juice is fermented for fifteen days in stainless steel tanks at 22 degrees, using only natural yeasts. After fermentation, the wine ages on the lees for a year, giving it extra complexity and body. This method fits perfectly with the philosophy of Pascal Jolivet, who has been working according to the principles of natural viticulture since 1987.

    The estate has over 120 hectares of vineyards spread across Sancerre and Pouilly-FuméPascal Jolivet views his vineyards as a living ecosystem and uses environmentally friendly techniques. The combination of different terroirs – limestone, clay, and flint – gives his wines a recognizable style. Slow fermentations and minimal use of sulfur result in pure wines with finesse. In addition to this red Sancerre, the estate also produces beautiful white wines from the Loire, which likewise reflect the region's minerality.
