• Domaine des Geneves Chablis: A 100% Chardonnay from the hills around the town of Chablis. Full-bodied, slightly creamy with citrus, butter, and white fruit. You can taste the calcareous, fossilized soil in this wine in the form of a briny minerality. This is also why this wine has been nicknamed “Oyster Water.” A creamy, briny taste at the start and a crisp, dry finish. Perfect with any type of shellfish or sushi!
• Domaine Salmon Sancerre: Sancerre, along with Chablis, is undoubtedly one of the most famous white wines from France. 100% Sauvignon Blanc from the Loire. Here, too, the vineyard soil is rich in limestone. This Sancerre from Domaine Salmon is Sauvignon Blanc in its purest form. Greenish-yellow in the glass with complex aromas of citrus, green bell pepper, and the characteristic crisp minerality on the finish. Intense, fresh, and thirst-quenching. This wine is also the ideal companion for shellfish but can also be enjoyed perfectly well as an aperitif.
• Serge Dagueneau et Filles Pouilly Fumé Tradition: Another interesting name that makes you wonder, what is it actually? Pouilly Fumé is always made from 100% Sauvignon Blanc and owes its name to the strip of flint (Fumé) that runs through the soil of this area. The village of Pouilly Fumé is located next to Sancerre in the Loire Valley and therefore shares many similarities with a Sancerre. What distinguishes this wine are the smoky notes brought by the flint. Furthermore, the taste is deliciously fruity—think grapefruit and lemon—but also elegant thanks to the minerality. In addition to pairing very well with shellfish, it also pairs excellently with grilled meat. Preferably white meat, so that the grilled notes come through well.
