Cabernet Sauvignon: The King of Red Wines

Cabernet Sauvignon is the most famous of all red grape varieties and the most widely planted grape variety worldwide. The grape originated from a crossing of Cabernet Franc and Sauvignon Blanc. It is also known as ‘King Cab’ and originally comes from France. This grape is known for its deep, complex wines with a full body and excellent ageing potential. The typical aromas of the grape include blackcurrant, cassis and dark cherries, often complemented by notes of green bell pepper, eucalyptus, tobacco and spices. When aged in oak barrels, the wine gains extra layers of vanilla, cedarwood, smoked wood and chocolate, contributing to its complexity.

Terroir and use

This grape thrives in different climates, but shows its best qualities in regions with many hours of sunshine and good drainage, such as Bordeaux in France and Napa Valley in California. Cab Sav is often the main grape in Bordeaux blends, where it is combined with Merlot and Cabernet Franc. The grape produces tannin-rich wines with a firm structure and high acidity, giving them great ageing potential. The result is a wine that can be enjoyed young as well as after years of ageing, with the flavour evolving into softer, more complex notes. Cabernet Sauvignon wines are made all over the world, from Chile to Australia, where terroir and vinification create many variations in style.
