The Aubert & Mathieu Hautes Pistes Chardonnay opens with inviting scents of brioche, almonds and apricots, supplemented with a subtle hint of citrus which provides a lovely freshness. On the palate, you taste a soft, creamy texture with a perfect balance between ripe fruit and lively acidity. The grapes for the Aubert & Mathieu Hautes Pistes Chardonnay are grown in high-altitude vineyards, at the foot of the Pyrenees. Thanks to the cool climate and the calcareous soil, the wine gets its refined character. Vinification is all about finesse: after the harvest the wine matures large wooden barrels (demi-muids), whereby regularly bâtonnage (Stirring the yeast cells) is applied to develop extra depth and complexity.
Not only is the taste impressive, but the reviews also speak volumes: 90 points at Wine Enthusiast and a 4.1/5 score on Vivino underscore the class of this exceptional Chardonnay.
Jean-Charles Mathieu and Anthony Aubert initially followed different paths: one worked in the financial sector in Paris, the other in wine marketing in the US and Thailand. Yet their passion for wine continued to draw them back. Both gentlemen grew up in Carcassonne, the heart of viticulture in the Languedoc, and in 2018 They decided to join forces to establish their own wine company.
