Hmm, this is what we understand by a classic and elegant Burgundy. Toast, nuts, ripe, white fruit, citrus, peach. It almost looks like a premium. Burgundy chardonnay; what depth; Melon, butter, apple, pear, gooseberry… And so on! The Bader-Mimeur Bourgogne Aligoté ‘Les Pierres’ is a characterful white wine with fresh, mineral, and creamy notes. Citrus aromas and white flowers characterize the aromatic profile with a light hint of butter. On the palate, it is surprisingly crisp yet creamy, with a soft bitterness for complexity. This wine comes from a specific plot in Chassagne-Montrachet with limestone and clayey soils called “les pierres”. The Aligoté grape, a historic variety from Burgundy, forms the basis. The terroir and careful viticulture result in an authentic Burgundy with great character. Only 2,000 bottles of this beautiful wine were produced in total.
The Bourgogne Aligoté 'Les Pierres' offers a pure, lively taste with fresh acidity and enough roundness. The mineral notes give the wine depth and structure. The wine goes well with various dishes from French cuisine. Enjoy this wine with fresh oysters or Burgundian escargots. A classic combination is the wine with boudin blanc or boudin noir. The wine also goes well with charcuterie or a salad with bacon. Or with smoked salmon or a Mediterranean-spiced chicken from the oven with cream sauce. The, in the famous Chassagne-Montrachet established, domain Bader-Mimeur operates according to sustainable principles without the use of herbicides. The grapes are hand-harvested in small crates of a maximum of 30 kg. After the harvest, the whole grape clusters are gently pressed. Natural fermentation takes place in French oak barrels. The wine then ages in oak for 10 months. without the use of new barrels. Regular batonnage creates extra complexity. Annual production is limited to 2,000 bottles. This method results in a Burgundy with an aging potential of 6 to 7 years.
